Hanukkah Recipes
The delicious food enjoyed during the Hanukkah holiday is very symbolic of the event being celebrated. Consequently, fried food is eaten during Hanukkah, symbolizing the oil that lasted eight days. Other food includes cheese as a figurative representation of Judith’s victory.
Originally, traditional latkes were a symbolic representation of the cheesecakes served by Judith, but later evolved to potato/cheese latkes which are popular now. The traditional Hanukkah recipes will surely delight all of you, even if you’re not Jewish.

Ada Shoshans Apple Latkes 2 eggs, well beaten 1 ½ cups orange juice, yogurt or milk 2 cups all-purpose flour 1 teaspoon baking powder Dash of salt ¼ - ½ cup sugar depending on taste 3 medium apples, peeled and coarsely grated Vegetable oil for frying Confectioner's sugar Makes approximately 36 latkes. |

Cheese Latkes 3 eggs 1 cup milk 1 cup cottage cheese, drained 1 1/2 cups flour 1 tsp baking powder 1/2 teaspoon salt 5 Tbsps. sugar 1 tsp. vanilla extract 1/2 cup oil for frying Place all the ingredients except oil together in a large bowl. Mix until smooth. |
