Cinco De Mayo Food & Recipes

Cinco de Mayo is a patriotic celebration of the Mexican which is observed to commemorate the victory of the Mexican army against France in the battle of Pleuba in 1862.  As the name suggests, the celebration is observed on the fifth day of May. The day is celebrated with more enthusiasm by the Mexican descendent in the United States than the native Mexicans. The celebration is a fun filled and colorful event with tasty treats, parades, folk dancing, mariachi music and partying.

The Cinco de Mayo is a day to celebrate with tasty Mexican foods, though a fixed menu is not observed on the day and the menu may vary between regions and families. The authentic Mexican recipes offer something for everyone, with the tomatoes, chilies, garlic and onion as the popular flavoring substance. Mexican cuisine is believed to be the healthiest of all and the chefs take care to use the freshest of the fresh vegetables and fruits in their preparations. The wonderful Mexican food is prepared by the correct blend of fresh vegetables, spices and meat to give it the unique flavor.

Mostly the feast of the Cinco de Mayo is prepared in the traditional way. There is a lot of mouth watering traditional recipes which could be prepared to celebrate the day. The Mexican food prepared at the Cinco de Mayo includes Mole ploblabno, puddings, chicken enchiladas, chilaquiles, tortilla chips, black bean salsa, guacamole, tortilla soup and green chilly beef stew.

Tortilla soup: this spicy and rich soup is one of the best loved Mexican dishes and is crispy and smooth at the same time. It is easy recipe which will call for appreciation from all sides.

In a soup pot, fry a small onion, two cloves of garlic and a plobano pepper. Add a pinch of oregano, a cup of cooked shredded chicken, half a cup of sweet corn and a table spoon of tomato puree. Sauté it a minute and add four cups of chicken stock and allow to simmer for 40 minutes stirring occasionally. At the same time fry tortilla strips in a bit of oil till crispy brown. Put the fried tortilla in a serving bowl and ladle the warm soup over it. Top with chopped cilantro, shredded cheese and a lime wedge. It is going to be a very warm and tasty comfort food but will be even better if you add a bowl full of love to it.

Chicken enchiladas are unique Mexican recipe which everyone in the family is going to love. Try preparing this Mexican delicacy on the Cinco de Mayo day and serve it with garden fresh salad and your guest will be very impressed on the chef in you.

In a saucepan, fry the both sides of tortilla in vegetable oil on medium flame till it is pliable. Drain off oil from the cooked tortilla by placing it in between paper towel.

 To make the sauce, melt 2 tablespoon of butter and sauté in equal amount of flour and two cups of chicken broth to get a saucy consistency. Add three teaspoons of chopped chilies and a cup of sour cream a stir on a low flame till it gets beautifully mixed and thick.

In a bowl mix two cups of shredded chicken, a cup of chopped onions and 2 oz of green chilies to make the fillings.

Dip each tortilla in a little sauce, and fill each with half a cup of chicken mixture, roll it over and arrange it side by side on the baking tray. And pour the remaining sauce on it. Bake at 350 degree Celsius for 25 minutes and sprinkle half a cup of shredded cheddar cheese and bake for another 3 minutes till the cheese melts on it. Garnish with fresh cilantro and spring onions to make a real treat for your family.

Tortilla chips are a snack food made from corn tortilla. They are served with dip such as salsa, chili con queso or glocomole, or else seasoned with spices and herbs.

Fresh fried tortilla chips can be made at your home and it is the easiest thing to make if you have a deep fryer at hand. Cut the corn tortilla into wedges, cut into smaller wedge if you are planning to store it longer. Mix the tortilla wedges with hand to separate them and then drop it in hot frying oil. After frying the chip, sprinkle salt and mix well to have your own tortilla chip. It can be served a black bean salsa dip.

Mexican black bean salsa uses black bean as the base ingredient rather than the normal tomato used in most salsa. This salsa stays fresh for a few days if refrigerated so don’t hesitate to prepare more on this festive day. This authentic salsa can be used as a great tortilla chip dip and this easy recipe can be prepared in a few minutes.

Mix in a cup of drained black bean, a clove of crushed garlic, a can of sweet corn, half a cup of tomato, onion and radish each. Add two table spoon of lime juice and finally salt and pepper. Garnish with cilantro and serve with a dollop of sour cream.
