Potala Rasa Ingredients

  • 500 grams parwal / potala
  • 200 grams potatoes
  • 1 big onion
  • 1 big tomato
  • 1 cup grated coconut
  • 2 tsp of ginger garlic paste
  • 1 tsp of coriander powder
  • 1 tsp cumin powder
  • 1 tsp. red chili powder
  • 1 tsp turmeric powder
  • Two bay leaves
  • 1 tsp garam masala powder
  • 2 tsp.  Grated coriander leaves
  • 4 to 6 tbsp oil
  • Salt to taste

Potala Rasa Preparation Method

For preparing potala rasa, coconut milk needs to be prepared first.

  • Add 3 cups of hot water to grated coconut and put it in the jar of the mixer grinder.
  • Grind till the coconut turns to fine paste.
  • Remove the paste and extract coconut milk using strainer.

The procedure of preparing potala rasa is as follows:

  • Peel the parwal / potala and slit.
  • Apply salt and turmeric powder.
  • Peel potatoes, and cut them into strips.
  • Chop the onion and tomato into small pieces.
  • Heat oil in a pan and fry the slit parwal and potato pieces.
  • Set these aside and fry onion and bay leaves in the same pan.
  • Once the onion turns golden brown, and ginger garlic paste, coriander powder, cumin powder, chili powder and turmeric and fry for a few minutes.
  • Now add the chopped tomato and fry till the oil separates.
  • Add the fried parwal and potatoes and stir well.
  • Add the coconut milk and salt to taste and heat on a low flame till it is properly cooked.
  • Add the garam masala powder and the grated coriander leaves and remove from flame.
  • Delicious potala rasa is ready to be served with hot rice or pulau.
