One has to start with peeling and grating the potatoes and parsnips while using a medium grater in the food processor. After the grating is done one has to dry out the potatoes and parsnip by squeezing and putting them in a separate bowl. Then one has to add the garlic, onion, one egg and seasoning according to taste. This mixture can now be divided in to six or five patties and fried in a non stick pan till they have a crisp, golden brown crust. At the same time one can grill some bacon and tomatoes while poaching the rest of the eggs as a serving accompaniment.
