Lemon Blueberry Muffins Ingredients

  • 2 cups flour
  • 1/2 cup sugar
  • 3 tsp baking powder
  • 1/2 tsp salt
  • Juice of one lemon
  • 1 egg
  • 1 cup milk
  • 1/2 cup softened shortening or butter (I used butter)
  • 1 cup frozen blueberries
  • 2 packets of raw cane sugar, for the top of each muffin

Topping 

  • 1/4 cup butter, melted
  • 1/2 tsp lemon juice
  • 1/2 cup sugar

Preparation Method for Lemon Blueberry Muffins Recipe

  • At first, make the muffin tray ready by greasing with cooking oil or butter. Preheat the oven to 375 degrees
  • For making Lemon Blueberry Muffins, mix the flour, sugar, baking powder and salt together and set aside.
  • Now, beat the eggs, milk and butter together and pour the mixture over the dry mixture. Stir carefully so that all of them get blended with each other.
  • Add the blueberries now.
  • Spoon the batter into the muffin tray lined with paper cups, top each one with a blueberry and bake at 375 degrees for 20-25 minutes or until they turn golden brown.
  • For the topping, while the muffins are still warm, dip the top of each one of them into butter and lemon zest. After that, dip into the sugar. Your delicious Lemon Blueberry Muffins are ready!
