Chile Fresca is basically a sauce and to cook this dish one will need:
2 cups of diced organic Roma tomatoes,
½ a diced red onion,
1 ½ New Mexican Hatch Chiles (roasted, seeded and diced),
½ bunch of chopped cilantro,
Juice of 6 freshly squeezed key limes and
Freshly ground black pepper
(One can choose to use mild or hot chilies according to the taste.)
All one has to do mix all the ingredients in a bowl and add salt according to taste. People can also use a blender if they desire a thinner sauce. After this is done one has to keep the sauce in the refrigerator as this dish tastes best when served chilled.
15 minutes. Majority of this time is spent in dicing and seeding the chilies etc. The actual procedure hardly takes any time whatsoever.
This dish is basically an accompaniment and can be had with some snacks like chips, hot wings etc. Many starters and nibbles go great with this sauce as well.
