Bread Salad Ingredients

  • Tomato chunks – of 4 to 5 medium sized tomatoes
  • Stale, crusty bread French loaf  or Italian – 4 cups  
  • Cucumber, seeded, skinned and cut into big chunks – of 1 cucumber
  • Chopped red onion – ½ 
  • Shredded fresh basil – 1 bunch
  • Olive oil – ¼ to ½ cup
  • Salt and pepper – to taste

Preparation Method for Bread Salad Recipe

  1. Add all the solid ingredients into the salad bowl
  2. Drizzle olive oil on to the mixture.
  3. Add salt and pepper.
  4. Gently mix all the ingredients.
  5. Allow to marinate for ½ hr to 12 hrs maximum.(Do not refrigerate the salad as this tends to spoil the texture of the tomatoes).
  6. Serve the salad at room temperature.

Serves: 6 to 8


  • While cutting the tomatoes, remove some of the liquid and seeds – the panzanella will still be sufficiently juicy. 


    Use the crusts also as they will cause the panzanella to be more chewy and add substance to the salad.
  • You can use fresh bread also, but if you do, cut the bread into large chunks and bake in an oven at 300°F for 5 to 10 minutes.
  • If you use fresh bread without baking, the bread may become mushy and  the salad will get spoilt.
