Lets learn how to make baingan bhaja and as it is an easy dish you can relish it with your every day meals. Wash and cut brinjal into circular slices and keep it aside. Now in a separate bowl, mix red chili powder, turmeric powder, green chilies, coriander seeds and ginger. Grind all these into a paste. Mix salt and smear the sliced brinjal with the paste.
Now in a shallow frying pan heat some oil and shallow fry the brinjal pieces. Fry on both side and once done, keep them on an absorbent paper. This would absorb the excess oil. Serve it hot with lemon slices. You can also garnish it with fresh coriander. Most people eat it as a side dish with hot rice and dal.
