Baigan ka Bharta Ingredients

  • 1: baigan (large)
  • ½ cup: green peas (cooked)
  • 1 onion: (finely chopped)
  • 1 tomato: (finely chopped)
  • 1 green chilies: (finely chopped)
  • ½ tsp: red chili powder
  • ¼ tsp: turmeric powder
  • ½ tsp: garam masala powder
  • 3 tbsp: Oil
  • Coriander leaves for garnishing
  • Salt to taste

Preparation Method for Baigan ka Bharta Recipe

Apply a little oil to the baigan (egg plant) and roast it on the gas burner. The flame should be on medium so that it gets roasted evenly. Every now and then keep turning the side so that it doesn’t get burned.

 

Once the baigan is completely roasted, put it under cold water. Allow it to cool and then take of the skin. Now mash it and keep it aside. In a cooking pan, add some oil and heat it. Once hot add onions and green chilies. Keep tossing till it turns golden brown. Add turmeric powder, chili powder, salt and garam masala and stir it for a while. After the masalas are mixed, add tomatoes and cook it until the oil oozes out.

 

Now add the green peas and the mashed baigan (egg plant) in it. Fry it well with the masala for about 7 minutes on medium flame. Once done garnish it with fresh coriander and serve with chapattis. It can also go well as a side dish with rice and dal.
