Arugula Shrimp Salad Ingredients

  • Medium raw shrimp : 500gms
  • Roughly chopped arugula : 4 cups
  • Olive oil          : 1 tablespoon
  • Sweet onions : ¼ cup
  • Croutons          : 1 cup 
  • Finely chopped fresh 
  • Parsley or coriander : 3 tablespoons
  • Green olives, halved : ½ cup
  • Minced clove of garlic          : 1
  • Hot pepper flakes : ¼ teaspoon
  • Orange vinaigrette : from 2 oranges
  • Cilantro      : A few large leaves for a garnish

  • Oranges                 : 2
  • Sherry vinegar        :  2 tablespoons
  • Olive oil                 : ¼ cup
  • Salt and Pepper         : to taste

How to prepare the Orange Vinaigrette

Grate one teaspoon of orange rind and set aside. Peel the oranges and drop the fruit into the bowl. Squeeze the juice out of the oranges in the bowl. Separate the orange pulp and blend the juice, orange rind, oil, salt, vinegar, and pepper in a blender and then set it aside to add to the salad later.

Method

Remove the shells from the shrimp. Using a large skillet, on a medium-high flame, heat oil and sauté the shrimp with garlic and hot pepper flakes until a pink coloration is reached. Add half the vinaigrette and stir fry for about 3 minutes or until the entire mixture is dry. Lastly mix in the cilantro, croutons, onion and remaining vinaigrette to oranges; toss to coat. Top with olive and shrimp. Refrigerate for about half an hour. Serve cold and garnish with celery leaves or cilantro.
