Boiled, skinless chicken breasts, diced : 2 cups
Sliced stalk of celery : 1
Medium apple, unpeeled and diced : 1
Raisins : ¼ cup
Fat-free mayonnaise : ¼ cup
Lemon juice : 1 tablespoon
Yoghurt : ¼ cup
Curry powder : 1 teaspoon (optional)
Put the chicken cubes in a medium-sized bowl. Add the sliced celery, raisins and cubed apple. Whisk the liquid ingredients, that is yoghurt, lemon juice and mayonnaise along with the curry powder and finally add the chicken. Toss the entire mixture, taking care not to shake too vigorously so as to retain the crispness of the ingredients. Add salt and pepper to the salad for taste.
Line a glass or porcelain bowl with fresh lettuce leaves. Just before serving, place the entire mixture gently on the lettuce leaves, leaving enough leaves protruding to be visible to form a pleasant color contrast between the salad and the leaves.
