Adaku Pathiri Ingredients

For the Egg Batter

  • Eggs: 4
  • Sugar: 4 tbsps
  • Coconut milk: 4 tbsp
  • Turmeric powder: a pinch
  • Cardamom: 4
  • Salt: as per taste

For the Rice Batter

  • Rice flour: ½ cup
  • Coconut milk: 1 large cup
  • Sugar: 5 tbsp
  • Cardamom:  4
  • Ghee; as per requirement
  • Salt to taste

Preparation Method for Adaku Pathiri Recipe

  1. First prepare the two separate batters
  2. In a bowl, break individual eggs and beat them, add sugar and whisk further, lastly add the other ingredients. Keep aside.
  3. In another bowl mix rice flour and coconut milk, add the other ingredients and form a smooth batter.
  4. Heat a pressure cooker with water in it.
  5. Place a small greased circular mould in it.
  6. Spoon in 4 tbsp of rice batter and steam till it is done.
  7. Remove from heat; spread a few tsp of ghee over the steamed rice.
  8.  Now spoon two tbsp of egg batter and steam.
  9. After the egg layer is steamed, add another layer of rice batter and steam.
  10. When cooked, spread some ghee and spoon in another layer of the egg batter.
  11. Repeat till all the batter is finished.
  12. Lastly steam for another 5 minutes.
  13. Remove and cool.
  14. Cut into desired shapes and serve as a snack.
  15. When the Adaku Pathiri is cut, the different colored layers can be seen.
