Squash Casserole Ingredients

  • 6 cups large sliced yellow squash and zucchini 
  • 1 cup grated cheddar cheese 
  • 1 large minced onion 
  • 3 tablespoon of vegetable oil 
  • 1/2 cup sour cream 
  • 4 tablespoons butter 
  • 1 teaspoon house seasoning, recipe given 
  • 1 cup crushed butter crackers (Ritz is recommended)

Squash Casserole Preparation Method

  • Preheat oven to 350 degrees F. 
  • Season the squash in a small quantity of vegetable oil over medium to low temperature until it has totally done almost about 15 to 20 minutes. Strain the squash using a colander and a clean tea towel. Put the cooked squash in the colander. Squeeze excess liquid from the squash. Now keep it aside. 
  • In an average size skillet, season the onion in butter for nearly 5 minutes. Remove from pan and add all ingredients i.e. cooked squash, cheddar cheese and sour cream together except cracker crumbs. Transfer the mixture into a greased casserole dish and decorate with cracker crumbs on the top of it. Bake for almost 30 minutes. 

How to Prepare House Seasoning 

  • One Fourth cup of black pepper 
  • One Fourth cup of garlic powder
  • 1 cup salt 

Mix black pepper, garlic powder and salt together and preserve in an airtight container for use and it can be used up to 6 months.
