Potato Pie Ingredients

 1 unbaked nine inch pastry shell, 2 cups mashed cooked potatoes, ½ cup half and half, 1 tablespoon of butter, ¾ cream style cottage cheese, ½ cup sour cream, 2 eggs, ½ teaspoon salt, ¼ teaspoon garlic powder, 1/8 teaspoon black pepper, 1/8 teaspoon cayenne pepper, 11/2 cups of shredded cheddar cheese, ½ cup of chopped onion and about 8 ounces of crisp and cooked bacon.

 

Potato Pie Preparation Method

The first thing to do is to line the unbaked pastry shell with foil and fill it with pie weights or dried beans. This should be baked at about 450 degrees for 5 minutes. Then one has to remove the foil and weight and continue baking for another 5 to 7 minutes. Then it should be removed from the oven and the temperature should be brought down to 425 degrees. The cottage cheese, sour cream, eggs, salt, garlic powder and pepper should be beaten with a processor or a mixer until it is smooth enough. Then one has to add the potato mixture and beat a little longer. The bacon, onion and shredded cheese should only be stirred properly. This whole mixture should then be put in to the pastry shell and baked at 425 degrees for 40 minutes.
