Lemon Coconut Cupcakes Ingredients

  • Softened butter 1/2 cups
  • Granulated sugar 1 cup
  • Eggs 2 large
  • Flour 1 1/2 cups
  • Shredded coconut 1/2 cup
  • Vanilla extract 1/2 teaspoon
  • Grated lemon 2 tablespoon
  • Milk 1/2 Cup
  • Baking powder 1 teaspoon
  • Salt 1/4 teaspoon

Coconut and lemon icing - 

  • Softened cream cheese 2 tablespoon
  • Softened butter 1 tablespoon
  • Lemon juice 1 teaspoon
  • Grated lemon rind 1/2 teaspoon
  • Icing sugar 1 cup
  • Shredded and sweetened coconut 1/2 cup

Lemon Coconut Cupcakes Preparation Method

  1. In a large bowl beat butter and granulated sugar, whisk till light and fluffy, add eggs, one at a time continuing beating the mix in between.
  2. In another bowl, mix in flour, baking powder, shredded lemon rind, salt and coconut for a few minutes. Add the vanilla extract to it and mix well. 
  3. Add the flour and coconut mix and milk alternating into the butter mix and beat well till you get the cup cake batter ready.
  4. Now spoon this cup cake batter into floured paper cups, (remember not to fill the cups completely as the cakes will rise when you bake it) and bake for 20 minutes in a pre heated oven at 350o for 20 minutes. (20 minutes is an approximate time, anyway it will take around 20 minutes you can check if your cake is cooked by inserting a toothpick into it.
  5. Take out your cup cakes and cool them completely before you do the icing.
  6. Meanwhile you can prepare your lemon coconut cupcake frosting. In a bowl, beat the cream cheese and butter till light now whisk in lemon rind and lemon juice and then beat in the icing sugar to make light fluffy and tasty frosting. You can add a dash of vanilla essence into the frosting and mix well.
  7. Top the icing over the cooled cup cakes and garnish with coconut flakes and shredded lemon peel.
