Quick And EasyEaster Salad Ingredients
- 1 small broccoli, cut into florets
- 100g sugar snap peas, trimmed
- 2/3 cup fresh or frozen peas
- 1/2 telegraph cucumber, cut into large cubes
- 1 avocado, diced
- 150g tub mixed salad sprout combo*
- 1/4 cup finely chopped flat-leaf parsley leaves
- 1/4 cup finely chopped mint leaves
- Juice of 2 lemons
- 100ml olive oil
- 3tbs of mixed salad seeds* (such as sunflower, sesame and pepita)
- 100g feta, crumbled
Easter Salad Preparation Method
The step by step preparation of making Easter salad is given below.
- The first and foremost step is to collect all the fresh vegetables mentioned above.
- Blanch the broccoli in boiling water for 2-3 minutes and later boil the frozen peas or fresh peas in the boiling water for 1-2 minutes. Drain the water and separate the vegetables.
- Collect the blanched vegetables in a large bowl and cut fine pieces of cucumber, avocado, sprouts, parsley and mint.
- Add the juice and oil in the bowl and whisk them till they mix well.
- Season and toss the salad with salad seeds. Top it crumbled feta.
