Easter Salad Ingredients

  • 1 small broccoli, cut into florets
  • 100g sugar snap peas, trimmed
  • 2/3 cup fresh or frozen peas
  • 1/2 telegraph cucumber, cut into large cubes
  • 1 avocado, diced
  • 150g tub mixed salad sprout combo*
  • 1/4 cup finely chopped flat-leaf parsley leaves
  • 1/4 cup finely chopped mint leaves
  • Juice of 2 lemons
  • 100ml olive oil
  • 3tbs of mixed salad seeds* (such as sunflower, sesame and pepita)
  • 100g feta, crumbled

Easter Salad Preparation Method

The step by step preparation of making Easter salad is given below.

  • The first and foremost step is to collect all the fresh vegetables mentioned above.
  • Blanch the broccoli in boiling water for 2-3 minutes and later boil the frozen peas or fresh peas in the boiling water for 1-2 minutes. Drain the water and separate the vegetables.
  • Collect the blanched vegetables in a large bowl and cut fine pieces of cucumber, avocado, sprouts, parsley and mint.
  • Add the juice and oil in the bowl and whisk them till they mix well.
  • Season and toss the salad with salad seeds. Top it crumbled feta.
