- Pinch a salt
- 80 grams butter chilled and cube shaped
- ¾ cup water for sieving.
Damper Preparation Method
- Preheat the oven to 200 degrees C and set a baking tray with non stick baking paper.
- Now take a medium size bowl and mix flour and salt. With your hands rub bit by bit butter into the flour till it forms and looks like bread crumbles.
- Now add water to the mixture and use a round bladed knife to bring the mixture together. Use the blade in a cutting motion. You can add 2 or 3 tablespoon water if required.
- Now use your hand to bring the mixture together and turn it into dough.
- Bring the dough onto a surface that is lightly floured and knead gently with soft hands for a minute or two so that it gets smooth.
- Now take some part of the dough and shape it into a disc of 18 cm to be appropriate and place it on the tray. Repeat the same with the entire dough.
- Use a sharp knife to mark 8 wedges on the top of each dough disc but do not forget to dip the knife into the flour.
- Dust the damper with some extra flour and now bake the same in the preheated oven for about half an hour.
- If you find that the damper is not cooked you can bake it for some more time.
- Once the damper is cooked through and sound hollow when tapped on the base you can transfer it to a wire rack for few minutes may be 4 to 5 minutes to let it cool slightly.
- Your damper is ready to serve.
- Serve it warm or at the room temperature.
