Damper Ingredients

  • 450 grams or 3 cups of self-raising flour
  • Pinch a salt
  • 80 grams butter chilled and cube shaped
  • ¾ cup water for sieving.

Damper Preparation Method

  1. Preheat the oven to 200 degrees C and set a baking tray with non stick baking paper. 
  2. Now take a medium size bowl and mix flour and salt. With your hands rub bit by bit butter into the flour till it forms and looks like bread crumbles.
  3. Now add water to the mixture and use a round bladed knife to bring the mixture together. Use the blade in a cutting motion. You can add 2 or 3 tablespoon water if required. 
  4. Now use your hand to bring the mixture together and turn it into dough.  
  5. Bring the dough onto a surface that is lightly floured and knead gently with soft hands for a minute or two so that it gets smooth. 
  6. Now take some part of the dough and shape it into a disc of 18 cm to be appropriate and place it on the tray. Repeat the same with the entire dough. 
  7. Use a sharp knife to mark 8 wedges on the top of each dough disc but do not forget to dip the knife into the flour. 
  8. Dust the damper with some extra flour and now bake the same in the preheated oven for about half an hour. 
  9. If you find that the damper is not cooked you can bake it for some more time. 
  10. Once the damper is cooked through and sound hollow when tapped on the base you can transfer it to a wire rack for few minutes may be 4 to 5 minutes to let it cool slightly. 
  11. Your damper is ready to serve. 
  12. Serve it warm or at the room temperature.
