Apple Fool Ingredients

  • 2 pounds tart apples, peeled and sliced
  • 1/2 lb. of dates
  • ½ cup water
  • 3/4 pint of milk
  • 1/4 pint of cream
  • 6 cloves
  • 1 tablespoon sugar
  • ½ pound blackberries
  • Mint leaves for garnishing 

Apple Fool Preparation Method

Cut the apples, stone the dates, add sugar and the cloves, and stew them in a large pot. Simmer in low heat for about 15 minutes or until the time it is completely soft. In a blender, make a puree of the blackberries. Strain it through a sieve so that the seeds are removed. Remove the cloves. Now puree the apples and the dates, and sieve to discard any pips; mix with the blackberry puree. Bring the milk to boil, and slowly add to the mixture. After that, add the cream. Garnish with blackberries and mint leaves. 

Refrigerate before serving. It tastes great when served with sponge-cake fingers.
